Chicken Fajita






Ingredients :

Skinless, Boneless breast chicken fillet
sliced into strips

1  sliced onion
3  sliced peppers of various colors
1 sliced jalapeno (optional)

Marinade:

lemon juice
salt
ground black pepper
mustard
olive oil
ground cumin
soya sauce (optional)


Instructions :


  • cut the chicken fillet into slices ,then place them in a powl , all the marinade ingredients over the chicken slices , stir until all the chicken are well coated keep at the refrigerator for at least 1 hour.

  • Stir-fry  the chicken with 2 tbsp sunflower oil in grill pan over high heat   until well cooked

  • in a second  frying pan stir fry the onion and peppers with 1 tsp sunflower oil cook until soft


  • Add the chicken over the peppers and serve with warmed tortilla

Sponge Cake






My first decorated sponge cake :D

6 Eggs separated 
1 Cup caster sugar
1 Cup plain flour
Vanilla
1 tsp baking powder
1/4 tsp salt

Instructions:

Prepare 2 bowls one for the whites and the other for the yolks

Beat the white with the salt for at least 8 mins  with electric mixer it will become thick and voluminous.  & then beat the yolk with the vanilla and sugar until get creamy


Add the creamy mixture to the white bowl 


Gently fold in the flour using large metal spoon, working in a gentle figure of 8 motion to preserve all the air you've whisked in. Keep going until no dry lumps of flour remain.

Preheat the oven to 180


Place it in the oven until golden brown about 30 min


Let it cool before dividing into layers prefer leave it in the refrigerator to the second day


NoteMake sure your eggs are at room temperature before beating them.  Cold eggs do not hold as much air.


Make sure that the electric mixer is dry

Lamb shank



Ingredients:
  • 1 carrots (chopped)
  • 1 onions (chopped)
  • 2 Gloves garlic 
  • 3 bay leaves
  •  3 cardamom
  • 1 tsp  rosemary
  •  black pepper 
  •  salt (to taste)
Instructions:
place all the above ingredients in a boiling water then add the shanks
Reduce the heat to medium and leave the shanks until the meat is tender and  well cooked
Remove the shanks from the liquid
sprinkle it with butter  and it in the oven until get colored

Rice with chicken liver (rice bel khalta)


Rice ingredients:

2 cups egyptian rice or basmati rice
2 tbsp mix butter and oil
2 1/2  cup water ( for basmati rice add 4 cups water)
 chicken stock pot
2 tbsp sugar
1 tsp cinnamon powder
1 cinnamon stick
black pepper 
salt (to taste)

khalta ingredients:

1/2 kilo chicken liver and gizzards, cut in small cubes
1 finely chopped onion
2 cloves chopped garlic
1 tbsp butter

topping:

almonds and hazelnuts flakes


Instructions:

place two pots on the hob on medium heat

in the first one place the 2 tbsp sugar until get caramel color then add the water , chicken stock ,cinnamon powder , cinnamon stick , salt , pepper and let it boil

in the other pot add the butter and rice and stir until get golden colored

add the caramel water to the  rice, cover and reduce the heat until cooked.



khalta Instructions:

wash the chicken liver and gizzards with vinegar and salt , set aside

on medium heat saute the onion and garlic until soft then add the chicken livers and gizzard ,add salt ,pepper 

cover until cooked 

toast the nuts on the oven for 5 minutes 

in a bowl add the khalta at the bottom then cover with rice, flip the bowl on a serving plate and top with the toasted almonds

Chicken shawrema

Ingredients

for marinating:

500 gm chicken breast fillet
1 cup yogurt 
1 lemon juice
1 tbsp white vinegar
salt ( to taste )
black pepper
shawrema spices ( if available)

Topping :

 3 cloves minced garlic
1 onion slices
 2 tomato cubes
hot chili pepper (optional)
minced fresh parsley

Instructions:

cut the chicken fillet into slices ,then place them in a powl
 Add all the marinade ingredients over the chicken slices , stir with a spoon until all the chicken are well coated
keep at the refrigerator for at least 2 hours up to overnight

Stir-fry  the chicken with 2 tbsp sunflower oil in grill pan  until well cooked and before turning the heat off add the topping ingredients 

serve with tortilla bread  and yogurt salad

Lazy Cake


Ingredients

1 packet  tea biscuits
125 melted butter 
3 tbsp unsweetened dark cocoa 
1 can sweetened condensed milk 

1 tsp vanilla 
100 gm melted  chocolate (any type you prefer or nutella) this is optional 




Instructions:


Crush the biscuits very coarsely
Mix all ingredients together and put it in  loaf pan  that lined with cling film or butter sheets  and Press.then cover with cling film  
Freeze for at least 3 hours prefer overnight
Cut it into slices and serve
Keep the rest in the fridge ( in air tight container)

(you can sprinkle  the loaf pan with m&m chocolate on the top of the mixture it will looks very lazy :D)




Chicken strips


Ingredients:


Chicken fillet breast
Egg
Flour
Milk
Corn flakes
Salt
Black pepper
Oil for frying



Instructions:

Cut the chicken in long strips 
Season with salt and pepper.
beat the eggs with small quantity of milk and black pepper
crush the corn flakes into small pieces with fork or your hands and season with salt , pepper, paprika, hot chilli , onion powder, garlic powder
coat chicken strips in flour, then dip in egg mixture and finally coat with seasoned cornflakes
either to fry it in oil or to bake in preheated oven 200C until golden colored


you can serve with roasted potatos

Roasted Baby potato

Ingredients

Baby potatoes
Salt and black pepper
Paprika
Garlic powder
2 tbsp olive oil
2 tbsp melted butter
Green onion to garnish


Instructions

Wash the potatoes and place in boiling water for 10 minutes, leaving their skin on.
In a small bowl, whisk the oil with garlic and paprika and butter
wait till  the potatoes are cool down   press them carefully with  a potato masher.
Toss them with oil mixture and place them in a baking pan

Preheat the oven to 200°C
Bake until they are golden and crispy . top with chopped green onion and serve .

pastrami pizza




Dough recipe

500 g plain flour
1 tbsp yeast
2 tbsp olive oil
1/2 tsp salt
1 tsp sugar
1 tbsp milk powder or cup of yogurt ( for soft dough)
Warm water

Instructions:

In a large bowl mix all the ingredients together and add warm water until you get soft dough

place in a clean bowl cover with cling film and keep in warm place for 2 hours ,till the dough has doubled in size

Roll out on a floured surface to fit the  baking tray you have. Sprinkle oil over the tray, then place the dough on top.

Tomato sauce ingredients

2 cloves minced garlic
1 tsp basil
1 tbsp tomato paste
Tomato sauce
Lemon juice
Salt
Black pepper
1 tbsp sunflower oil

Instructions:

In a pan saute the garlic with oil then add the tomato sauce and tomato paste and stir until smooth

  1. Add remaining ingredients and bring to slow simmer for about 8 to 10 min
  2. Ready to spread on the pizza
Topping:

Grated Mozzarella & cheddar cheese
Mozzarella cheese ring sliced
Green pepper ring sliced
pastrami 


Preheat the oven 200c , place the pizza for about from 10 to 20 min or until cooked & serve immediately

Shish Tawook (Chicken Thigh Fillet)






1 Kg Chicken Thigh Fillet

Serve : 4 persons

Method of cooking : Oven or Grill

Ingredients:


  • chicken thigh chunks
  • lemon juice
  • 2 tbs olive oil
  • salt
  • pepper
  • 1 ts paprika or chili powder
  • 1 tbs mustard
  • 3 cloves minced garlic
  • 1 tbs tomato paste
  • 1 ts oregano
  • 1 ts Sumac
  • 1 tbs plain yogurt
  • green peppers cut into large chunks
  • onion cut into large chunks
  • skewers

Instructions:





Marinade the chicken with all the above ingredients and keep it at the refrigerator for at least 2 hours

Thread the chicken , pepper chunks and onion chunks into the skewers

Preheat the oven , place the chicken in the oven until cooked or golden colored  or no longer pink inside

Mesa'a (Mes2a3a)



Ingredients:


  • Thick slices of Aubergine
  • Cubes of potatoes
  • Green pepper
  • Hot chili pepper
  • Tomato sauce
  • Minced garlic
  • Sunflower oil
  • Salt and pepper


Instructions:



  • Fry the aubergine , the potatoes and the green and hot pepper
  • In a saucepan, heat 2 tablespoons oil over medium heat, stir in the garlic till get yellow 
  • Add the tomato sauce, season with salt and pepper
  • Simmer for 6-7 minutes
  • Prepare oven pan, and put all the aubergine, potatoes,the green pepper  and top with the tomato sauce
  • Place the pan in the oven until cooked about  for 20 minutes

Ingredients:

Sausage
Onion slices
Green pepper slices
Grated mozzarella & Cheddar cheese
ketchup
Hot sauce

Instructions:

  1. Stir-fry  the sausage with 1 tbsp sunflower oil in grill pan and before turning the heat off add the onion and green pepper for only  1 min,
  2. Prepare the wrap ,sprinkle with cheese and top with sausage, onion &pepper.
  3. Roll up,Bake for 5 minutes, until cheese has melted and wraps get colored, cut in half and serve .

Lentil Soup




serve :4 to 5
cooking time :30 min
Method: Hob

Ingredients:

1 cup of red lentil
1 medium tomato without skin
1 medium diced onion 
2 medium diced carrots
2 cloves garlic
1 tsp cumin
1/2 tsp black pepper
salt
wraps
1 onion slices 


Instructions;

Rinse the lentil in plenty of cold water
Place the lentil in large saucepan add cover  it wiz water
Add all the above ingredients and bring it to boil for 10 min
Reduce the heat to low & simmer till the carrots get soft 
Blend the soup with the hand-blender until no chunks of carrots remain.return to boil 
Cut the wraps into equal pieces and place it in the oven until get crispy
Fry the onion slices in sunflower oil until colored ,
Top the lentil with the onion & serve.

Vegetarian Pizza





Yield: 3-4 medium pizza



Dough recipe

Fillo Pastry with minced beef









Filo Pastry Sheet 500G ( about 14 sheets)
Serves: 4 to 5
Method: oven

Ingredients:

500g minced beef 
1 medium minced onion
2 cloves minced garlic
1/2 tsp nutmeg
1 tsp allspices
Mozzarella cheese (optional)
salt 
pepper
Melted butter or oil ( can mix butter with oil)
1 cup of milk
1 egg

Instructions:

Take out of the fridge about 20 minutes before using.. 
To avoid drying out, filo pastry must always be kept wrapped before use.
Saute the onion and garlic in saucepan with 1 tbsp butter 

Add the minced beef and season wit salt, pepper,allspices and nutmeg,cover until cooked.

Prepare a large oven pan and sprinkle with melted butter

Cover the pan with two filo sheets and sprinkle butter and repeat till finish half the sheets then the spread the minced  beef on top of the filo sheets and continue adding the remaining sheets. 

Mix the cup of milk with the egg and season with salt and pepper

Add this mixture on top of the filo pastry.

cut the filo into  pieces with a sharp knife before baking.

preheat the oven 200C and place the the filo until it absorb all the liquid and golden colored.
