Sausage wrap


Onion slices
Green pepper slices
Grated mozzarella & Cheddar cheese
Hot sauce


  1. Stir-fry  the sausage with 1 tbsp sunflower oil in grill pan and before turning the heat off add the onion and green pepper for only  1 min,
  2. Prepare the wrap ,sprinkle with cheese and top with sausage, onion &pepper.
  3. Roll up,Bake for 5 minutes, until cheese has melted and wraps get colored, cut in half and serve .

Lentil Soup

serve :4 to 5
cooking time :30 min
Method: Hob


1 cup of red lentil
1 medium tomato without skin
1 medium diced onion 
2 medium diced carrots
2 cloves garlic
1 tsp cumin
1/2 tsp black pepper
1 onion slices 


Rinse the lentil in plenty of cold water
Place the lentil in large saucepan add cover  it wiz water
Add all the above ingredients and bring it to boil for 10 min
Reduce the heat to low & simmer till the carrots get soft 
Blend the soup with the hand-blender until no chunks of carrots remain.return to boil 
Cut the wraps into equal pieces and place it in the oven until get crispy
Fry the onion slices in sunflower oil until colored ,
Top the lentil with the onion & serve.

Vegetarian Pizza

Yield: 3-4 medium pizza

Dough recipe

500 g plain flour
1 tbsp yeast
2 tbsp olive oil
1/2 tsp salt
1 tsp sugar
1 tbsp milk powder or cup of yogurt ( for soft dough)
1 tsp onion powder
1 tsp garlic powder
1 tsp dried basil or oregano
Warm water


In a large bowl mix all the ingredients together and add warm water until you get soft dough

place in a clean bowl cover with cling film and keep in warm place for 2 hours ,till the dough has doubled in size

Roll out on a floured surface to fit the  baking tray you have. Sprinkle oil over the tray, then place the dough on top.

Tomato sauce ingredients

2 cloves minced garlic
1 tsp basil
1 tbsp tomato paste
Tomato sauce
Lemon juice
Black pepper
1 tbsp sunflower oil


In a pan saute the garlic with oil then add the tomato sauce and tomato paste and stir until smooth

  1. Add remaining ingredients and bring to slow simmer for about 8 to 10 min
  2. Ready to spread on the pizza

Grated Mozzarella & cheddar cheese
Green pepper tin sliced
Onion thin sliced
Green olives
Black olives

Preheat the oven 200c , place the pizza for about 15 min

Fillo Pastry with minced beef

Filo Pastry Sheet 500G ( about 14 sheets)
Serves: 4 to 5
Method: oven


500g minced beef 
1 medium minced onion
2 cloves minced garlic
1/2 tsp nutmeg
1 tsp allspices
Mozzarella cheese (optional)
Melted butter or oil ( can mix butter with oil)
1 cup of milk
1 egg


Take out of the fridge about 20 minutes before using.. 
To avoid drying out, filo pastry must always be kept wrapped before use.
Saute the onion and garlic in saucepan with 1 tbsp butter 

Add the minced beef and season wit salt, pepper,allspices and nutmeg,cover until cooked.

Prepare a large oven pan and sprinkle with melted butter

Cover the pan with two filo sheets and sprinkle butter and repeat till finish half the sheets then the spread the minced  beef on top of the filo sheets and continue adding the remaining sheets. 

Mix the cup of milk with the egg and season with salt and pepper

Add this mixture on top of the filo pastry.

cut the filo into  pieces with a sharp knife before baking.

preheat the oven 200C and place the the filo until it absorb all the liquid and golden colored.

Lamb Shank with Basmati Rice


  • 2 lamb shanks
  • 1 carrots (chopped)
  • 1 onions (chopped)
  • 2 Gloves garlic 
  • 3 bay leaves
  • 1 cinnamon sticks(optional)
  •  3 cardamom
  • 1 tsp  rosemary
  •  black pepper 
  •  salt (to taste)
place all the above ingredients in a large saucepan and add water 
place it to boil then add the shanks ,reduce the heat to medium and leave the shanks until the meat is tender and  well cooked
Remove the shanks from the liquid
sprinkle it with butter  and it in the oven until get colored
you can serve with Basmati rice or mashed potato 

Grilled Kofta

Grilled Kofta
Serves : 4 to 6
Cooking time :15 min


  • 1 Kg minced beef or lamb
  • 2 medium finely minced onion
  • 3 cloves minced garlic
  • 50 g fresh minced parsley
  • 1½ tsp ground allspice
  • 1 tsp paprika or chili powder
  • 1½ tsp salt
  • 1 tsp black pepper
  • Skewers

  1. in a bowl mix all the ingredients with your  hands until well mixed

  1. form  the mixture into 22 meat balls
  2. take a thick skewer (if not available you can use 3 skewers at same time), shape the mix into long, torpedo-like fingers, about 3-inches long, around the skewer..

  1. keep at the fridge for at least  30 min before cooking

  1. preheat the oven 200c and place the kofta in oven pan and cook for 15 min or until colored
  2. Finally Scatter with some parsley on top and serve.

1 Kg Shrimps
1 onion slices
3 cloves garlic slices
1 lemon juice
fresh celery
2 tomato slices
2 tbsp sunflower oil
black pepper
hot chili pepper
fresh minced coriander  


Wash the shrimps with salt we vinegar and rinse with water
Put the shrimps in saucepan and add all the above ingredients
cover and cook for 8 minutes or until its color turned pink ,then u can put in the oven for another
5 minutes.
Top with minced parsley or coriander and serve

Salmon and shrimp

Chocolate cake


  • 1 cup flour
  • 3 eggs
  • 1 cup milk
  • 1 cups sugar
  • 1 tsp vanilla extract
  • 1 tbsp baking powder
  • 1 cup sunflower oil
  • 3 tbsp cocoa powder
  • chopped  chocolate ( any type to taste)


  1. Preheat oven to 180C/fan.
  2. In a large bowl mix with electric beater the the sugar ,milk ,oil  and cocoa powder
  3. take apart one cup of this sauce and keep it in the refrigerator
  4.  then add eggs and vanilla until well mixed, finally add the flour mixed with baking powder
  5. bake it for around 40 min ( until you put a skewer and come out clean).
  6. top with the sauce  and chopped chocolate


Chocolate Cupcake
Cooking Time ; 20 min


  • 3 cups flour
  • 4 eggs
  • 1 cup milk
  • 2 cups sugar
  • 1 tsp vanilla extract
  • 1 tbsp baking powder
  • 1 cup sunflower oil
  • 3 tbsp cocoa powder
  1. Preheat oven to 180C/fan.
  2. In a large bowl mix with electric beater the eggs with the sugar and vanilla then add the oil and milk until well mixed, finally add the flour , baking powder and the cocoa.
  3. Divide between cases and bake for 20 min ( until you put a skewer and come out clean).

Lamb Leg

1 leg of lamb 3 Kg  

Serves 5 to 6 

you can serve either  with potato or basmati rice


1 Sliced onion
3 cloves garlic
1 cup of yogurt
1 tsp oregano
1 tsp rosemary
2 tbsp olive oil 
1 tsp paprika
1 lemon juice
2 tbs vinegar
Chili powder
2 tbsp soya sauce or Worcestershire sauce
salt (to taste)
black pepper
minced fresh ginger


Marinate the leg and keep it  for at least 12 hours in the fridge.

Place the lamb leg in roasting bag and make small opens in it in order not to blow out in the oven.

Preheat the oven 220 C and put the lamb for 30 min then reduce the heat 190 and keep it for at least 2 hours .

Remove the roasting bag and add potato  and keep it for another 30 min .
